Every list has the spritz everyone already knows. This is the alternative to it. Red bell peppers ferment in a vacuum bag for a week, go into a cordial, and pour on draft with mezcal and Aperol. Same category, same price point, a drink the guest has not had before.

The drink

The obvious way to put a pepper in a cocktail is heat: a spicy margarita, a jalapeno shrub. This goes the other way. A week of lacto fermentation turns a sweet red pepper savory and sour, keeps the fruit, and adds nothing sharp.

Aperol is the reason the drink reads as a spritz rather than a vegetable juice. Its bitterness sits on top of the pepper and its own sugar does a quarter of the sweetening. The mezcal is there in a small pour, 20 ml, for smoke underneath rather than for the alcohol.

Water replaces the prosecco, which means the acid has to be built rather than borrowed. Tartaric goes into the cordial. The ferment contributes about 0.5 g/L of lactic on its own, and the tartaric takes the finished drink to about 5 g/L. Same acid target as the bottled sparkling, arrived at a different way.

It goes on draft because it qualifies. No fresh citrus, an acid-adjusted cordial rather than juice, everything coffee-filtered, shelf stable cold. Those are the keg rules, and this drink was specced to meet them.

Finished-drink targets

ABV: ~6%
Sugar: ~83 g/L
Acid: 5 g/L, tartaric plus the lactic from the ferment
Salt: ~1.4 g/L, carried from the brine
Carbonation: 3.5 volumes, 6.9 g/L
Serve: 220 ml on draft, wine glass, ice, pitted olive

Prep 1: the ferment

Salt at 2.5% of the weight of the peppers. Two percent is the standard vacuum-bag figure for vegetables, and the extra half point holds a sugar-rich pepper through a full seven days.

The vacuum bag does the work an airlock does in a crock. Sealed, headspace oxygen sits at 0.2% or below against roughly 21% in open air, so the lactobacillus has the bag to itself. pH should be under 4.6 within 48 hours and under 4.0 by day five. If it is not, dump it.

Temperature is what breaks ferments, not time. Hold it in a temperature controlled space and leave it there. Gas builds from around day two and the bag will swell, so double bag it and release the pressure rather than waiting to find out how much the seal takes.

Spec, per 2,000 g red bell pepper

2,000 g red bell pepper, cored, cut in 2 cm pieces
50 g fine salt, 2.5%

1. Toss the pepper with the salt until every piece is coated.
2. Lay flat in a vacuum bag, seal, then seal that bag inside a second one.
3. 7 days at 20 to 22°C in a temperature controlled space.
4. Cut, release the gas and reseal on day 2 and day 4.
5. Blend, press, then chinois and coffee filter.

Yield ~1,150 g juice. One ferment fills one keg.

Prep 2: the cordial

Equal weight of sugar to strained juice, dissolved over low heat. The heat also ends the ferment, so the cordial stops moving the day it is made.

Spec, per 1,000 g strained juice

1,000 g fermented pepper juice, strained
1,000 g white sugar
80 g tartaric acid

1. Warm the juice gently. Do not boil.
2. Add the sugar and the tartaric, stir until fully dissolved.
3. Cool, then coffee filter again.

Yield ~1,650 ml at 610 g/L sugar, 50 °Bx.
From a full 1,150 g ferment: 1,150 g sugar, 90 g tartaric, ~1,890 ml.

The build

Taste it flat one glass at a time before a keg goes on gas.

Spec, per serve

20 ml mezcal
40 ml Aperol
20 ml lacto pepper cordial
140 ml water

220 ml finished.

A flat sample reads sweeter than the poured drink. Carbonic acid registers as acidity on the palate and pushes perceived sweetness down, so judge the sugar with gas in it or judge it knowing the gap.

The keg

Spec, per liter

90 ml mezcal
180 ml Aperol
90 ml lacto pepper cordial
640 ml water

1. Combine cold.
2. Chill the mix to 2°C.
3. Force carbonate to 3.5 volumes.

4.5 serves per liter.

1,710 ml mezcal
3,420 ml Aperol
1,710 ml lacto pepper cordial
12,160 ml water

86 serves. Keg in the fridge at 0 to 2°C, cold line to the tap.

Cold, sealed and under gas at 6% with 5 g/L of acid, the keg holds for weeks. That is the same condition as a purged and capped bottle, at service volume.

Service

The pour

1. Wine glass, ice.
2. 220 ml from the tap, down the side of the glass.
3. Pitted olive on a pick.

The olive goes on a pick rather than into the glass. Dropped in, it gives the carbonation something to nucleate on and the drink foams over the rim.

The operator math

Per liter, using a $35 mezcal, a $28 Aperol, and red bell peppers at $1.20 a pound:

  • Mezcal, 90 ml: ~$4.20
  • Aperol, 180 ml: ~$6.70
  • Cordial, 90 ml: ~$0.45, from $5.30 of peppers, $1.40 of sugar and $2.30 of tartaric across 1,890 ml
  • CO2: ~$0.05

That is about $11.40 a liter, or $2.50 a serve at 4.5 serves. On a $19 menu price that is a 13% pour cost.

The labour is one week of doing nothing, one cordial session and one keg fill. What service gets is a tap pull, an ice scoop and an olive. Eighty-six of those come off one 19 L keg and 4.4 pounds of peppers.

Where it goes wrong

  • Ferment stalls or turns: the temperature moved. A controlled space is the whole rule.
  • Bag splits: gas builds from day two. Double bag, release and reseal on day 2 and day 4.
  • pH is above 4.6 at 48 hours: it is not going to recover. Dump it.
  • Keg foams on every pour: the mix went in warm, or the line is not cold to the tap.
  • Cloudy or gushing pour: particulate in the cordial. Coffee filter after the press and again after the sugar.
  • Drink reads salty rather than seasoned: the ferment ran above 2.5% salt.

The ferment is the same pillar as the tepache, run with salt instead of sugar. Prep of this kind, with the batch sheets and SOPs behind it, is what a prep lab engagement builds.
