Lost & Found Drinkery

A twenty-seat bar tucked off a side street in old Nicosia. When the bar opened, Cypriot cocktail culture meant vodka and Red Bull. By 2015 it was on the World’s 50 Best Bars list — the first Cypriot bar ever to make it. In 2018 it ranked #25 and earned two Tales of the Cocktail Spirited Awards Top 10 nominations the same year: Best International Cocktail Bar and Best International Bar Team. It held a place on the list for nine consecutive years.

The program was built on a tight repertoire, technique-led prep, and a team trained to call regulars by name before they reached the stool. The peer set in the 2018 Tales cohort included Manhattan Bar Singapore, the Connaught, the Savoy’s American Bar, Tippling Club, Speak Low Shanghai, and the Clumsies Athens.

Tocayo

Tocayo is one of Nicosia’s most ambitious restaurants — a kitchen that runs on technique, sourcing, and quiet confidence. The bar had to keep up. Andreas built the program from scratch: a short, opinionated list paired to the food, with the seasonal turnover the chef expected from the kitchen also expected from the bar.

The bar list was deliberately small. Twelve drinks, every one defensible against the room. Service-volume considerations baked in from day one — every cocktail prepped, batched where the integrity allowed, plated within thirty seconds in service. The kind of thing operators learn the hard way after opening.

Here Nor There / In Plain Sight

Two rooms, one downtown Austin address: Here Nor There, the hidden-entry, reservation-only speakeasy flagship, and In Plain Sight, its aperitivo-style sister bar. Consulted across both concepts at a critical stage — auditing the running menu for prep efficiency, fixing COGS, and training the team on the techniques the program demanded.

From there, helped the team develop their new menu: technique development, prep workflows, and specs built so an ambitious list could run night after night. Within twelve months In Plain Sight was a Spirited Awards 2023 U.S. Regional Top 10 Honoree for Best New U.S. Cocktail Bar — and the rooms have become the place Austin bartenders go on their nights off.

Casa de Cuba

A Caribbean-driven cocktail and rum program in a market that didn’t default to spirit-forward cocktails. Built a list that reads as a single editorial — heavy on rum, aware of the desert climate, designed for service volume against an international guest base.

The program leaned on long-aged rums, smoked syrups, and tropical acids that could survive the temperature differential between the bar and the table. Training emphasized speed under volume — Friday nights in Abu Dhabi mean covers that NYC operators don’t typically forecast for.

Vine Bar

A New York bar ready to push past the expected. Created the Explorers menu — a highly innovative list built around new techniques and unexpected flavors — and carried it from concept to nightly service: recipe development, specs, costings, and prep workflows.

Innovation only counts if the room can serve it. Trained the team on every build and the techniques behind them, so the menu’s ambition survived contact with a full Friday night — and kept its consistency after we left.
