An ambitious menu that survived a full room.

The brief

A New York bar ready to push past the expected, wanting a list built on new techniques and unexpected flavors — without the usual fate of ambitious menus, which is dying quietly three weeks after launch when the prep collapses under a full room.

New York is unforgiving on that point. Guests have had the technique somewhere else; they will not wait for a slow build, and they will not come back for a simplified version of the launch list. The job was to write drinks that were worth crossing the river for, then engineer them so the house could still serve them at volume.

What we did

  • Created the Explorers menu from concept to nightly service — a highly innovative list built around new techniques and unexpected flavor pairings
  • Wrote complete recipe specs with costings, so every drink had a margin target before it had a garnish
  • Built the prep workflows that made the innovation servable — batching, clarification, and mise en place scaled to the room
  • Trained the team on every build and the techniques behind them, then trained them to train the next hire

Technique without a costing is a hobby. Costing without a prep system is a spreadsheet. The Explorers work was all three in one pass: the drinks, the numbers, the mise that let a Brooklyn Saturday keep the same specs as a Tuesday tasting.
