A rum program built for volume, in a market that doesn’t default to it.

The brief

An Abu Dhabi venue trading on a deep Caribbean catalog, in a market that doesn’t default to spirit-forward drinking and a climate that punishes delicate builds. Friday nights here mean covers NYC operators don’t typically forecast for.

The product had to read as one editorial — rum as the point, not a theme night — and still move at hotel-adjacent volume. A stirred, fragile drink that dies between the bar and a terrace table is not a serious menu item in that climate. The list had to survive the temperature differential and the cover count.

What we did

  • Built the full opening program — concept, cocktail and rum menu, supplier setup, team training, and opening-week support
  • Wrote a list that reads as a single editorial: heavy on long-aged rums, smoked syrups, and tropical acids that survive the temperature differential between bar and table
  • Designed every build for service volume against an international guest base
  • Trained for speed under pressure — technique that holds at five hundred covers

Five hundred covers is the number that decides equipment, batching, and who you hire. You do not invent a rum library on opening week and hope the team catches up. Supplier setup happened before doors; training was for speed under pressure, not for a tasting-room pace.   • The full playbook — specs, prep, training — handed to the house team at close

No ranking is attached to this room. The venue later closed. The case is here because the brief is common — open a spirit-forward program in a market and climate that will punish a list written for somewhere else — and because the deliverable was a playbook the house could run. That is the only honest result you can claim for a room that no longer exists.
